 Ingredients

For the Watermelon Poke:

  • 2 cups watermelon, cubed into bite-sized pieces
  • 1 tbsp soy sauce or tamari
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • ½ tsp chili flakes (optional)
  • ½ tbsp Erry’thang Spicy Ginger or Garlic Basil Sauce
  • 1 green onion, thinly sliced
  • ½ tsp sesame seeds

For the Crispy Rice Base:

  • 2 cups cooked white jasmine or sushi rice (cooled)
  • 2 tbsp Erry’thang Spicy Ginger or Garlic Basil Sauce
  • 1 tsp neutral oil (like avocado or canola)

Toppings (optional but delicious):

  • Sliced avocado
  • Cucumber ribbons
  • Shredded carrot
  • Pickled red onions
  • Seaweed snacks or furikake
  • Extra drizzle of Erry’thang Sauce

Instructions

1. Marinate the Watermelon

In a bowl, whisk together soy sauce, sesame oil, rice vinegar, chili flakes, Erry’thang Sauce, and green onions. Gently toss in the watermelon cubes. Cover and refrigerate for 10–15 minutes while prepping the rice.

2. Make the Crispy Sauce-Infused Rice

Heat a non-stick skillet over medium heat and add oil. In a bowl, mix the cooled rice with 2 tablespoons of Erry’thang Spicy Ginger or Garlic Basil Sauce until evenly coated.
Spread the rice in the skillet and press down slightly. Let it toast for 5–10 minutes, until the bottom is golden and crispy. (Don’t stir—let it crust up!)

3. Assemble the Bowl

Scoop crispy rice into a bowl. Add marinated watermelon poke on top. Arrange your favorite toppings around the bowl, then drizzle with more Erry’thang Sauce for a spicy-sweet kick.
