Ingredients
2 lbs pork belly, skin on
2 tbsp olive oil
1 tsp black pepper
1 tsp sea salt (or more Spicy Basil Salt for extra flavor)
½ cup Erry’thang Spicy Garlic Sauce (plus more for dipping)
1 tsp Spicy Basil Salt (for finishing)
Fresh chopped scallions (for garnish)
---
Instructions
1. Prep the Pork Belly
Score the skin of the pork belly in a crisscross pattern (careful not to cut into the meat).
Rub olive oil, sea salt, and black pepper all over.
2. Roast to Perfection
Preheat oven to 450°F (230°C).
Place pork belly skin-side up on a rack in a roasting pan.
Roast for 30 minutes to crisp the skin, then lower heat to 325°F (160°C) and cook for another 1.5 hours until tender.
3. Glaze It Up
Brush generously with Erry’thang Spicy Garlic Sauce and return to the oven for 10 minutes.
Let rest 5–10 minutes before slicing into thick pieces.
4. Finish Strong
Sprinkle with Spicy Basil Salt and garnish with scallions. Serve with rice, noodles, or on a platter with dipping bowls of extra sauce.

Why This Works
The slow roast gives the pork belly melt-in-your-mouth tenderness while keeping the skin crispy. The Spicy Garlic Sauce adds a fiery, garlicky glaze, while the Spicy Basil Salt ties it all together with a fragrant kick. It’s the perfect balance of heat, crunch, and flavor.
Pro Tip
For an extra-crispy finish, switch your oven to broil for the last 2–3 minutes after glazing—just keep an eye on it so it doesn’t burn!
